Pai Mu Tan Pai Mu Tan Ref: WC01
A difficult to obtain but ever popular Chinese white tea. The name means 'white peony', and relates to the delicate flower petal appearance of this tea. The liquor and aroma are delicate light and sweet. Truly one of the most exquisite cups of tea you will ever taste!

Brewing Advice: Use two heaped teaspoons per mug, add hot but not boilng water (70 deg C). Steep for two minutes. Suitable for multiple infusions.

Two leaves and a bud are plucked, carefully rolled into pearls and left to dry in the sun. This tea is extremly difficult to make as the buds must be rolled without breaking the leaf or the tea will ferment making a black rather than a white tea.

For just a few weeks of the year the single buds of special tea bushes are plucked as the sun rises, rolled very lightly by hand and left to dry in the hot midday sun. Also known as Yin Zhen.

This white tea is a more affordable (but equally good) version of the Ceylon Silver Tips. It brews a light sweet cup which is very refreshing.

Georgian Old Lady Georgian Old Lady Ref: WG01
Georgia (ex USSR) has many tea growing villagers who manufacture their own tea by hand in their homes. The whole process is completely natural and performed by hand. They pluck buds and tender tips from the bushes, wither them in a single layer over night. Next morning the leaf is hand rolled out to curl it and get the fermentation going, and the tea is spread out to dry in the sun. Our roving teaman persuaded a venerable tea making lady in a village near Ozurgeti (in West Georgia) to part with a little of her tea. This unique tea is exclusive to Nothing But Tea, available nowhere else outside of Georgia and only in limited quantities.

Because we can only get limited amounts of these hand made teas. We now have a different Old Lady tea. This one is made by the lovely Natela (see photo). There are always differnces between batches of handmade tea and differences between makers but the tea still looks and tastes wonderful.

Brewing Advice: One heaped teaspoon per mug add hot water (80degC) for five minutes. Alternatively this tea can be made with boiling hot water.

Our Old Gentleman tea is made by Iuri in the tiny village Nasakirali. His tea was made in May, and has all the freshness of a springtime meadow. Old Gentleman tea is very well twisted and even; it is blacker than our Old Lady tea made in August by Natela, though her's shows more silver tip. In the cup Iuri's Old Gentleman tea is slightly more robust and complex and is a darker brew, while Natela's is lighter and sweeter, as befits a lady.

Note for animal lovers - Iuri has an unusual black and white dog with one brown eye and one blue eye! His tea is just as unusual!
